Bake Time: 40 min (9" cake pan // 24cm )
Cool Off Time: 2-3 hrs
Ingredients:
13 oz (370g) Nutella
1/2 cup (120g) Butter (unsalted)
6 Eggs
3 oz (85g) Chocolate, 85% Cacao (make sure to use Swiss chocolate! :)
3 oz (85g) Hazelnuts (I buy them ground, but grinding them yourself is much better)
MakeTheCake:
- In a non stick pan, quickly roast the hazelnuts then set them aside in a plate to cool off. Be careful, they burn easily!
- Melt the butter and the chocolate (broken into pieces) in a pan, mix with a (wooden) spoon until melted, then let it cool off a little.
- Butter a 9" cake pan and preheat the oven to 350º F (= 180º C)
- Take a big bowl, and mix the Nutella and the Hazelnuts
- Separate the egg whites and the yolks, add the yolks to the Nutella-Hazelnuts mix, and mix the mix!
- In another bowl, whip the whites with a pinch of salt (using a mixer). The whites should have a firm consistency but still look wet, don't over do it!
- Add the butter-chocolate mix to the Nutella-Hazelnut mix, and mix the mix again!
- Carefully, in small increments (about 1/4 at a time), fold in the whipped egg whites.
- You can add a tiny bit of baking powder if you want, but it is not necessary.
Be aware: the cake will come out of the oven nice and fluffy, but it will deflate to half the size during its cool off period, so don't be shocked!

ReplyDeleteOh, yes! I forgot to mention that ... will add in the post, cause it's a huge advantage. You could also substitute the hazelnut with almonds (in case of hazelnut allergies, which I think are quite common?)

ReplyDeletehuh, interesting! It's called "tree nut" allergy: http://en.wikipedia.org/wiki/Tree_nut_allergy. I didn't know. People who are allergic should avoid all of them. There's also nuts in Nutella, so this cake is definitely not for tree nutter :)
DeleteI am so glad I am not allergic!!! Though this is making me miss the bakeries in Germany. There are these little bakery stands all over in Berlin (Le CroBag) and particularly at the S and U Bahn stations. My favourite is a nuss-nougat croissant...basically a croissant filled with nutella and chopped hazelnuts, and then topped with hazelnuts as well. *sigh*

DeleteI was in Berlin in the summer of 1989, and I LOVED the street food.
Berlin. I miss it. Well, I miss all of Europe. One time my parents picked me up from the airport and I hadn't even been in Germany for 30 minutes, and they were like, are you hungry? Do you want to get a döner (this lovely Turkish kebab sandwich thing)...that is something I miss desperately.

I will have to take you up on that offer sometime. Perhaps when I am in Germany visiting my parents (though I am not sure when that will be), I will just have to jump over to Switzerland and come and see you. And we can eat Nutella cake. Enjoy that croissant for me ^^
